Sie ist eine der beliebtesten Fruchttragenden Baumarten, die in großer Anzahl und Sortenvielfalt angebaut werden.
Die Olivenhaine und die einzelnen Bäume werden sehr oft einige hundert Jahre alt und können einen Durchmesser von 1-2m erreichen.
Ein Olivenbaum bzw. Strauch wächst sehr langsam und die Blattstiele und Blätter sind intensiv silber-grau.
Die Blätter sind schmal und Lanzenförmig 2,5 bis 12 cm lang, 0,5 bis 2 cm breit. Aus den steinigen Früchten wird bis zu 90% das beliebte Olivenöl gewonnen und die anderen 10% werden für allerlei Speisen und zum Eindosen so wie Einlegen verarbeitet.
Soll der Baum einen guten Ertrag haben, so sagt ein altes Sprichwort: desto krummer und knorriger der Baum, desto mehr der Ertrag.
Die Olivenbäume sind selbst Bestäuber und können mit einer künstlichen Bestäubung einen weitaus größeren Ertrag erreichen.
Mit einem Alter von ca. 25 Jahren ist ein Olivenbaum am ertragreichsten.

Die Früchte sind im wachsenden Stadium wie der Wortlaut sagt olivgrün und wenn sie reif sind haben sie eine schwarze Farbe.
